Today I made Almond Butter!  I took pictures as I went to show you how as well.

First, you toast 2 cups of whatever nut or seed you’d like to use (I used almonds, obviously) in a dry skillet until they begin to pop and turn golden.

Then put the nuts  in to your food processor.

This little food processor was one of my mom's wedding gifts. She made baby food for me and my siblings in it!

Grind the nuts to a powder (I didn’t grind mine very fine because I wanted it to be more textured)

Yeah, it's a little full.

Yeah, it's a little full.

Then pour in about 1/4-1/3 cup of oil (I used olive) until you get the consistency you want.

Scoop it into a jar with a seal…

And make yourself a sandwich to eat!  (Use some delicious sprouted grain bread for an additional nutritional punch)

Yum!

So there you have it!  Fun and easy almond butter!

Oh, and here’s what Nathaniel and Søren were doing while I was making it:

Picture Update!

This is a few weeks old- he used to keep the hat on!

This is a few weeks old- he used to keep the hat on!

Well, I’ve been slacking so I thought I’d show off some of our pictures from the last… I don’t know, month?  The one above is from playing at the park with Jonathan, Whitney, and CH.  Søren loves his “aunts” and “uncles”!

The day before Nathaniel’s birthday, Theo decided we needed to go to Branson.  None of us really questioned this idea, surprisingly.  We ended up having a good time and ate a delicious dinner at this fab Mexican restaurant, Cantina Laredo.
After nursing in the camping-chair-section, I somehow got into a conversation with an employee on which the topic turned to the cap guns.  I told him that we were never allowed to play with guns and that I didn’t like toy guns as a parent either.  When he asked why and I replied that I’m a pacifist vegetarian, he blurted out “well what are you doing in HERE then?!”  We all got a big laugh out of that one!

For Nathaniel’s birthday we had DQ cake (his favorite) and presents at my dad’s house and then we played a nice game of RISK.  Søren fell asleep in grandpa’s lap about halfway through- cute, huh?

We have 6 BumGenius 3.0 one-size diapers.  We like the fit and function of them a lot but I HATE velcro!  It gets pilly and gross and Søren has figured out how to open it up.  Not fun.

So last night I decided to try out a conversion to snaps on one of my diapers.  It worked great!  Here are some pictures of the finished product:

So, what do you think?  I’ll try to get some action shots in a minute.  I just put it on him and it looks great!

June Shoutouts!

The weather has been beautiful and I’ve had no time to update my blog.  Lots of playing outside with friends and family!

I wanted to let you all in on a fun giveaway though.  My friend Anna  is doing her first ever giveaway on her blog!  The url for the giveaway is here:  MamaJourney’s Charlie’s soap giveaway. She’s drawing an entry to win a free bag of Charlie’s Soap and a spray bottle of Charlie’s all-purpose cleaner.  I haven’t used the spray but I use Charlie’s for my laundry and I love it!  It is great stuff and incredibly economical to use.  The bags look small but each load of laundry only needs one tablespoon!  It’s also fantastic for cloth diapers because there are NO additives.  Anyway, head over there and check it out!

I also want to show you my BFF Katie’s online shop.  She is the genius behind Skunkboy Creatures on etsy and her creations get cuter every day, I swear!

I hope everyone is having a fabulous summer so far!

Earlier this week, Nathaniel made a fantastic discovery while browsing Craigslist:  there was a 2001 Volvo V70 listed for a great price in the KC area which is only about 3 hours from us!  We did some checking on Carfax and spoke with the seller and decided that we would take a little roadtrip to KC for an overnight adventure.  I got a good deal on a room at the Q Hotel, a new “green” hotel in the westport district and we headed out with Søren and my teenaged sister, Theo in tow on Friday when Nathaniel got off work.

Road Trip! Theo and Søren at our first stop.

Road Trip! Theo and Søren at our first stop.

Yes, Søren is mostly naked in that picture.  He likes to chew on a mesh feeder bad filled with ice cubes while we’re in the car but he hates having soaked clothes.  Look very closely and you might see two of Søren’s new teeth!
We arrived in Kansas City proper and promptly headed to the hotel to check in and unload before trying to find some dinner.  The hotel was pretty swanky but I LOVE boutique hotels and this one seemed to be perfect for our eco-conscious family with it’s recycling and composting programs, low-flow toilets, CFLs, and other “green” features.  Unfortunately, the service was pretty much terrible from the start and the night manager and only other front-desk employee seemed to be irritated by having to put down their blackberry phones to attend to customers.  Finally after much typing and chatting (with the other employee and guests, not us) the manager gave us the keys to our room and we went to the car to get our bags.  When we came in and asked how to get to our room, we got a look that said ‘figure it out’ and a point in the direction of the elevator.  We found the room and I was a bit apprehensive due to the beer-toting people in the hallway and group of propped doors at the end of the hall.  A LOUD party was ensuing.  We tried to open our door but the privacy latch caught.  Thinking it was weird, I tried again.  This time we heard a stern “WRONG ROOM!!!” called out from within.  Great.  We headed back to the desk to tell them the room was occupied.  They were not pleased and started typing away at the computer again.  They called the room and apologized to the guests, then pulled out their papers and our papers.  I peeked over the desk and saw that they had identical check in and check out dates and room numbers so there was no clerical error, they simply double booked the same room.  All this time we’ve spent hanging out in the lobby, Søren has been perfectly behaved and smiling at everyone.  Finally, we were given keys to a different room and headed into that one very cautiously.  Luckily, it was unoccupied so we dropped our stuff, used the restroom and logged on to the wifi to find a place to eat.  Keep in mind that at this point it’s 10pm!  The room fiasco took more than an hour!  We ended up eating at PF Changs- not ideal as I prefer locally owned restaurants, especially when travelling, but they served dinner until midnight so it was the best option.  After dinner we headed back to the hotel where the staff had thankfully delivered the rollaway we requested… with no pillows.  We called down and asked for two pillows and after MUCH hesitation, the man at the desk said that they’d send someone up in a bit.  I went to use the complimentary computer service in the lobby while Nathaniel played with and read to Søren.  Now, I understand that air conditioning isn’t very eco-friendly… we haven’t used ours yet this year at our house!  Celing fans would be nice though- the computer room was stifling, humid, and to add to the tropical feel, there were tiny flies that kept landing on my screen!  I went back to the room after about half an hour and found Nathaniel and Søren reading quietly and Theo passed out on the rollaway with two pillows- one of them from our bed!  They only brought her one pillow when I specifically requested two!  I layed down to nurse and decided to watch a little television since we don’t have one at home and I thought it’d be a fun treat.  The television wasn’t plugged in.  When we plugged it in, it wouldn’t work and continuously shut off.  After 20 or so minutes of tinkering, it finally stayed on and I flipped through channels.  Søren went to sleep pretty easily because he was tired out from his long day.  Our neighbors, on the other hand, came back to their room at about 1:30 am and knocked things around and showered for about an hour before they presumably fell asleep.

We woke up this morning to head to the complimentary hot breakfast bar where we had fresh omelets and waffles that were the best part of the hotel stay.  The dining room had a VERY institutional feel for such a nice hotel though.  Nathaniel surprised me by sending me to the in-hotel spa after breakfast for a massage.  I headed there ready to relax from the rest of the hotel debacle but found only a small, cramped room.  The massage therapist was nice but after three comments on my part about too much pressure, still didn’t let up.  I’m so sore still that I can barely sit comfortably.

At check-out, the employee at the desk asked us how our stay was and when we replied with a halfhearted “alright” he LITERALLY glared at us.  No joke.  He said “just alright?” but was obviously not looking for a reply because when we attempted to elaborate, he cut us off with a question about the debit card.

I know that sounds pretty harsh but really I would never dream of staying in that hotel again.  It was worse than getting a motel room at a Sleep-Inn would have been except that the bed was pretty comfortable.

Anyway, the trip was not all terrible!  Today, we started the day by heading to Happybottomus, a cloth diaper store in Lee’s Summit, MO.  I’d never been to a brick-and-mortar cloth diaper store so that was fun!  We ended up getting quite the variety of merchandise including a wool wrap, a new pul cover, 2 new wetbags (one is a pail liner, the other is for the diaper bag), hemp nursing pads, 2 bumgenius snap closure organic all in ones to try out, and a couple of other items.  The young female employee at the store was extremely personable, helpful, and sweet.

Then, the moment we’d been waiting for.  We went to check out the car in Overland Park.  We walked up and introduced ourselves to the owner who was very nice and then started looking the car over.  The first thing I noticed was that the inside was quite dirty.  It was going to take some real work to clean it all out.  The exterior had some scratches and dings but nothing really serious.  Nathaniel test drove it and when he got back, we made an offer on it.  After a quick barter, we reached a deal and with that, we purchased our first family car at a fantastic price!

After a nice trip to Whole Foods where we always spend way too much money (we never get to go to them, okay?!)  we headed home.  I led our mini-caravan with Theo and Søren in the back seat of my Pontiac and Nathaniel followed in the station wagon.  We stopped halfway and Søren nursed in the back of the Volvo at a gas station while the rest of us ate dessert.

Søren started screaming 30 minutes from home and there was no reasonable way to stop for him.  I felt awful by the time we pulled up at my mom’s house to drop Theo off but he recovered immediately when I picked him up.  After we left and got to our own home sweet home, my very dear friends Emily, Daniel, and Cole stopped by to visit.  We had a grand time catching up (Em and Cole go to school in Illinois) and they loved playing with Søren who was very excited to see his “stuff” when we got home.

All in all, I think the trip was a success.  We ended up having fun despite the issues and Søren was as perfect a baby as one could ask for until those last 30 minutes.  I was initially worried about him in a hotel but he slept fine and never once screamed/cried/otherwise disturbed any sleeping guests.

I will leave this post with a few bonus pictures of the kiddo from the last week!

Søren still doesn’t really EAT much in the way of solid food but he’s begun to really enjoy tasting and playing with food.  Yay!  It’s pretty fun to let him get all messy and then let him play in the bath.  He thinks so too!

My first wool shorties. Not bad for my first real knitting project, I'd say!

My first wool shorties. Not bad for my first real knitting project, I'd say!

I finished my first pair of knit shorties on Monday!  I knit on them for a total of 5 days but there was a day in there that I didn’t get to pick them up and one day that I only knit about 4 rows.  I also had a couple of times where I had to tear back and re-knit an area or spend some time deciphering the pattern so I’ll bet my next pair will knit up more quickly.

In other news, Søren has had a hard week trying to cut those two top teeth through.  Hopefully they’ll cut and quit bothering him so much soon!  Here’s a picture I managed to get a couple nights ago (last night maybe actually?) while he was out cold in my lap.  It was one of my only chances to really examine his gums as he is strong and quick and hates having him mouth touched.  Today I caught another glimpse and they are much much whiter and there’s barely any gum left covering them.  He’ll look so different with teeth!

Well, I guess that is all for now.  I need to figure out what to knit now, any ideas?

Last Weekend!

So, do you think the work was worth it?  I think so.  My mom was so surprised to see Søren in his own 5K shirt!

WordPress has been buggy for the past few weeks and this week I couldn’t get anything on it to work but the issue has been resolved now- thank you tech support!

After the 5K last friday we went to see my BFF Katie’s band The Flat Earth Society play at the Front Porch.  Søren was totally into it!  Here are some pictures of him at the show:

He wanted to be right in front, banging on the stage and rocking out the whole time.  Everyone was pointing at him- glad he’s not shy!

He's going to be a musical child, I believe

The next day, he performed on the maraca at Nathaniel’s show at Borders bookstore.  He was very good and really stole the show with his fearless crawling-while-playing and stage presence.

So, that was last weekend!  This week, we decided to purchase Søren some ear protection and found some earphones for kids and babies.  They came in the mail yesterday and look fantastic.  They are great because we tested them out and he’ll still be able to clearly hear the music at shows but it won’t be so loud as to damage his tiny little eardrums.   They’ll get their first use at Nathaniel’s show tomorrow night.

In other news: Søren the amazing toothless 9-month-old has his two top front teeth coming in.  His gums have two little (big!) teeth just barely below the surface and making his gums pointy and white.  Everyone said bottoms come first but I’ve always thought his tops would for some reason.  Anyway, he’s doing really well with it even though we can tell that it hurts him a lot.  I think the bottoms won’t be far behind because his gums are starting to get hard and swollen on the bottom, also.  My baby is growing up so fast!

Apologies!

Sorry for the lack of updates.  My image uploader isn’t working!  I’m going to stick it out and see if the issue is resolved within a week and if not, I’ll pick up and head somewheres else.   The wordpress tech support is being quite helpful though so I think everything will be fine.  Stick around as I have some really adorable pictures to share!!

My mother organizes a lot of events each year for the Bar Association but arguably her favorite is the Law Day 5K which will be taking place tomorrow afternoon. For the past few days I have been helping with last-minute preparations for the event and today I was in charge of rolling and labeling all the t-shirts. I took mine and Nathaniel’s from the boxes so that we would have them to wear tomorrow to the race and I also swiped another one without telling my mother, thinking that it would be super quick to make it baby-sized so that Søren could wear one to the race too and it’d be a fun surprise for his proud grandmother.

Great Idea… in theory.

As you might know about me, I make everything much harder than I need to. I did end up with a beautiful final product (to be worn once…) but the steps to get there were intense. I am sorry that I didn’t document each step but I’m going to tell you all about it.

This is what Søren's shirt used to look like. Adult size: Large

This is what Søren's shirt used to look like. Adult size: Large

So I started with a large t-shirt because there were lots of them so I thought it would be the size least likely to be missed.

I then found a shirt that fits Søren:

This shirt is one that fits Søren currently- I used it as a model.

This shirt is one that fits Søren currently- I used it as a model.

Using the blue shirt as a model, I got to work cutting out pieces for Søren’s tiny race shirt. I cut a body piece from the front, another from the back, two pieces for sleeves from the existing sleeves so that the edges were finished, and I removed the shirt’s neckline to sew into the finished baby shirt. Then I pinned and assembled everything which was very, very confusing.

As it turns out, though it was a LOT of work, it was worth it. Here is a picture of the baby shirt with my shirt (adult medium) for size comparison.

Here’s a closeup of just the baby shirt so you can see how cute it really is:

I also had an opportunity to use my brand spankin’ new snap pliers to make shoulder snaps so that the shirt is easier to get over his big ol’ head. Here’s a picture:

All in all? This project was a total pain in the ass but hopefully my mom will get a real kick out of it at the race and it’ll be worth it.

This post has also been a pain to type because wordpress isn’t working correctly and my typing shows up as white so I have to keep highlighting my text to edit. Also, “visual” mode still won’t won’t so I’m in HTML mode and the picture uploader isn’t working correctly. Troubleshooting tips anyone??

Today was Earth Day and a truly gorgeous day it was indeed! Søren and I had a fun playdate where I picked up some unwanted clothes from the mama (earth points! Reuse clothing!) and Søren and his little buddy played outside with water (appreciating natural resources! Earth points!)

Next we went to visit Drury University’s celebration and got to hang out with a lot more of our favorite people and listen to the lovely Southern Hills. While we were there we sat in the sunshine wearing our new California Baby Organic sunscreen (earth points!) and Søren played with (read: sucked on) some sticks (earth points…?) I got some Chico bags for $1 each- sweet deal! (Oh yeah, earth points for reusable shopping bags, too.)

Tonight, we went to church and had community dinner (on dishes, not plastic. Earth points!) Afterward, we went on a walk with my dad (earth points for walking instead of wasting energy watching television) and then came back to our home to play and see Anne Marie. I don’t think we got any earth points unless you count the cloth diapers that have been changed since we got here.

Sorry for the obnoxious post, point system, and exclamation marks. I believe Mr. Søren might be getting a tooth or something but I am not getting ANY sleep. Obviously.

So how did you celebrate mother earth today?
